Veggie Challenge: Day 1

Well, the day has finally come: today officially kicks-off my two week vegetarian challenge!

It was very odd not going by the meat/poultry/seafood sections when I was buying groceries last night. I’ve never not bought at least one thing from one of those categories. It was kind of surreal, actually.

Today has been difficult :). I’ve been craving meat since the second I woke up this morning, and I’m sure it’s solely because I know that I can’t have it. I haven’t given in, by the way – I had a Morningstar Grillers veggie burger for lunch. I was pleasantly surprised to find that not only was it not awful, but it was kinda good, too. Not beef, but decent. I could taste beans, & it had a smokey flavor that really helped. All in all, a good option that I will keep in mind for future meatless meals.

I’m actually looking forward to dinner. I plan on making a spinach & mozzarella quesadilla or wrap, something involving a tortilla. I may even throw in some black beans.

So far, so good overall…of course it hasn’t even been 24 hours. Wish me luck, because I’m gonna need it to keep from giving in to my carnivorous cravings :).

Back to laundry, carpet cleaning, dishes, dog bathing, putting together baby shower gifts…you get the idea.
